Meat from 2 young coconuts cut into strips the size of your finger
½ lime juiced
1 tsp cumin seed
1 clove of garlic minced
pinch of himalayan salt
2 tsp of coconut oil
Heat a small skillet on medium high temperature, add cumin seeds and swirl in pan until they start to smoke.
Remove from skillet
Place coconut strips in an airtight container with lime juice, minced garlic, cumin seeds, and salt. Allow to marinate for at least 1 hour.
Heat cast iron pan or skillet to medium high and melt coconut oil.
Add coconut strips and marinade juice, cook until coconut strips start to brown
Reduce heat to medium and continue cooking another 5 minutes until golden brown.
