This rings true for us, so much of what we value as wellness begins in the gut! That is why we began incorporating fermented foods into our own diets over a decade ago. Ok, life is still not perfect but our own health is much better from it. Our fermented vegetables are considered both probiotic and prebiotic.
Pro-biotics serve the body in an number of ways: support digestion, boost immune system, calm the nervous system, alkalise and help the other good gut bacteria to produce very important vitamins and enzymes. Prebiotics help by feeding the probiotic bacteria. It is like planting a garden and then feeding the plants. The flora in living cultured foods form a "living shield" that covers the small intestine's inner lining and helps inhibit pathogenic organisms including E.coli, salmonella and an unhealthy overgrowth of candida (yeast).
We love nature and that is why we let nature be our “starter”. Fermented foods have been a staple in most cultures diet for centuries. Fermenting is a naturally occurring process and we are just helping by creating the ideal environment for nature to do its thing. Simple and perfect. The batches are hand crafted with care and our 10+ years of experience to ensure maximum health benefits, proper fermentation and delicious taste.
Fermented foods were the original condiments (ya know that special sauce that makes everything taste better). They were created to help the body digest the more complex meals that we tend to eat. Poor digestion can occur because of stress, environmental contamination and poor diet, leaving us enzyme deficient and unable to process the nutrients in food. Supporting digestion, assimilation and elimination of our foods enables us to detoxify while receiving maximum nutrition from our diet.
Fermenting is also a natural way to preserve the goodness of freshly grown and harvested foods. We source our produce locally and seasonally. Due to nature, there may be variations of look and taste from batch to batch. We think this is fun way to enjoy the diversity of life, because no cabbage looks and tastes exactly the same. It is just like a fine wine, all the elements factor in to the final product soil, temperature variations, water to name a few.

Each jar is full of hand crafted, wild fermented veggies from locally sourced organic produce. We have chosen to use cabbages grown organically, by a small local permaculture farmer. The farm is not certified organic, not because it uses chemicals, rather the certification process is often too prohibitive for small farmers. That is why we are not certified organic. We have chosen to support local small farmers instead of the larger (sometimes factory farmed) certified organic produce companies. We know where, when and by whom each cabbage is grown we even know where the organic cabbage seeds came from. Not many people can say that, even about their certified organic produce. We can personally guarantee the quality and integrity of our produce because we are involved in every process. The cabbages are harvested from a farm close to Sydney (only 50km away) and then off to production.
Our fermented veggies are made by hand in small batches. After being sliced, seasoned and packed into the kegs, it is a waiting game. The initial ferment takes 3-4 weeks, followed by another 4 weeks of “curing”. Honouring the age old “wild ferment” (no artificial starters, strains necessary) is a process of waiting and allowing, rather than interfering to speed up the process of fermenting and curing. From start to finish each jar takes a minimum of 90 days to complete its process, combine that with the months prior of growing, so what you have in your jar began as intention over 6 months ago. We think you can taste and feel the goodness, the care and love, the patience and expertise from start to finish.
